STARLIGHT MINT SURPRISE COOKIES
- Preheat oven to 375 degrees.
- Sift together: 3 C sifted flour, 1 tsp baking soda, and 1/2 tsp salt.
- Cream together well: 1 C butter (half of it can be shorening), 1 C sugar (add in gradually), 1/2 C firmly packed light brown sugar.
- Blend in and beat well: 2 unbeaten eggs, 2 T water, 1 tsp vanilla.
- Add dry ingredients to wet ingrediets, beat well.
- Cover and refrigerate at least 2 hours.
- To create cookie, put a Tbsp of dough on a greased cookie sheet.
- Set cookies 2" apart.
- Press a mint wafer in the center of each cookie.
- Wrap dough up and over the wafer.
- Bake for 10-12 minutes.
(This recipe is one my mother made frequently and it was a favorite in our family. I mentioned it to a friend with whom I'd grown up and she said it was her mother's recipe too.
