STARLIGHT MINT SURPRISE COOKIES

    (This recipe is one my mother made frequently and it was a favorite in our family. I mentioned it to a friend with whom I'd grown up and she said it was her mother's recipe too. She thinks her mother gave it to my mother. Either way, it's a winner and honors two wonderful ladies. The mint wafers can be ordered from www.bakedeco.com and on Etsy, if not in your local stores.)

  • Preheat oven to 375 degrees.
  • Sift together: 3 C sifted flour, 1 tsp baking soda, and 1/2 tsp salt.
  • Cream together well: 1 C butter (half of it can be shorening), 1 C sugar (add in gradually), 1/2 C firmly packed light brown sugar.
  • Blend in and beat well: 2 unbeaten eggs, 2 T water, 1 tsp vanilla.
  • Add dry ingredients to wet ingrediets, beat well.
  • Cover and refrigerate at least 2 hours.
  • To create cookie, put a Tbsp of dough on a greased cookie sheet.
  • Set cookies 2" apart.
  • Press a mint wafer in the center of each cookie.
  • Wrap dough up and over the wafer.
  • Bake for 10-12 minutes.
