OZARK PUDDING

(This recipe came from my mother, who received it from her friend Elsie Mahla. Elsie passed through my mother's life a decade before I was born, so I know little about her. But one of the things, luckily, is this very simple recipe for what ends up being an apple cake.)



• 1 egg
• 1/2-3/4 C sugar
• 1/2 C flour
• 2 tsp baking powder
• 1/2 tsp salt
• 1 tsp vanilla
• 1 C diced apples (diced small; usually 1 apple is enough)
• 1/2 C chopped walnuts
• Beat egg.
• Add everything else.
• Put in greased pie tin.
• Bake at 350 degrees for 30 minutes.
