CRANBERRY FRUIT NUT BREAD
- 2 C all-purpose flour
- 1 C sugar
- 1 1/2 tsp baking powder
- 1 tsp salt
- 1/2 tsp baking soda
- 2 tblsp shortening
- 1 tblsp grated orange rind
- 3/4 C orange juice
- 1 well-beaten egg
- 1 C fresh or frozen cranberries, coarsely chopped
- 1/2 C chopped nuts
- Preheat oven to 350 degrees.
- Mix flour, sugar, baking powder, salt, and baking soda.
- Stir orange juice, grated orange rind, shortening and egg into dry ingredients.
- Mix well until blended.
- Stir in cranberries and chopped nuts.
- Turn into loaf pan greased with butter only.
- Bake 55-60 minutes.
- Cool thoroughly before serving.
(This recipe was a favorite of Rosiean Cook, my good friend JoAnn Gaye's mother. I tried it myself and it's a winner. Quite easy to make and it comes out deliciously moist.)
