CRANBERRY FRUIT NUT BREAD

    (This recipe was a favorite of Rosiean Cook, my good friend JoAnn Gaye's mother. I tried it myself and it's a winner. Quite easy to make and it comes out deliciously moist.)

  • 2 C all-purpose flour
  • 1 C sugar
  • 1 1/2 tsp baking powder
  • 1 tsp salt
  • 1/2 tsp baking soda
  • 2 tblsp shortening
  • 1 tblsp grated orange rind
  • 3/4 C orange juice
  • 1 well-beaten egg
  • 1 C fresh or frozen cranberries, coarsely chopped
  • 1/2 C chopped nuts
  • Preheat oven to 350 degrees.
  • Mix flour, sugar, baking powder, salt, and baking soda.
  • Stir orange juice, grated orange rind, shortening and egg into dry ingredients.
  • Mix well until blended.
  • Stir in cranberries and chopped nuts.
  • Turn into loaf pan greased with butter only.
  • Bake 55-60 minutes.
  • Cool thoroughly before serving.
