APPLE FLOAT

    (This recipe was my mother-in-law's, by way of my sister-in-law. It's a favorite of my husband's, and with good reason. It's like eating sweet, fruit-filled air. We've tried both versions, and prefer the original.)

  • ---The original version----
  • 1 can evaporated whole milk, well-chilled
  • 1/4 C lemon juice
  • 1/2 C sugar
  • 2 16-oz jars of applesauce, well-chilled
  • 2 packages of graham crackers, crushed in a zip-lock bag
  • Whip milk until soft peaks form.
  • Add lemon juice and sugar.
  • Continue to whip until stiff peaks form.
  • Fold in the applesauce.
  • Put half of the graham cracker crumbs in the bottom of a 13" x 9" pan.
  • Spread half of applesauce mixture over the crumbs.
  • Repeat.
  • ---An easier version----
  • 8 oz. Cool Whip, defrosted
  • 16 oz jar of applesauce
  • 1 1/2 C graham cracker crumbs (about one package from box)
  • Fold applesauce into Cool Whip.
  • Put half of the graham cracker crumbs in the bottom of a smaller dish.
  • Spread half of applesauce mixture over the crumbs.
  • Repeat.
